Holiday dishes can be festive, delicious AND healthy. Just try one of my newest plated creations and you’ll see the proof is in the pudding!

 

Serves 2 to 4 people

Preparation time: 10 minutes (plating)
Cooking: 25 minutes (oven roasted sea bream fillets w/ garlic and basil infused olive oil + tomatoes drizzled with basil infused olive oil)

Plating

  • Serve in individual plates making sure to incorporate each element of the dish in your plating (sea bream, lemon, tomato, starch if added, onion, basil)
  • Sprinkle with basil leaves
  • Drizzle with basil infused olive oil

How to create this meal:

 

1/ Sea bream fillets w/ garlic and basil infused olive oil

Preparation time: 5 minutes
Cooking time: 10 minutes

What you’ll need

– 2 sea bream fillets
– Half of a 15g vegetable broth cube
– 2 teaspoons of garlic powder (or 2 cloves of garlic)
– Basil infused olive oil
– Fresh basil
– Parchment paper

 

Directions

 

Preheat your oven to 180°C (rotating heat)
– In a salad bowl, thoroughly season the fish fillets by hand with the vegetable stock cube and garlic powder (or cloves).
Place the fillets on a parchment paper lined baking sheet.
Drizzle on olive oil on each piece of fish.
Oven the baking sheet and cook for 9 minutes on rotating heat and 1 minute on the grill
Plate with a sprinkle of basil leaves

 

Tips and twists

* Not all ovens work identically. The cook times provided only apply to the oven I am using.

* You can switch out the sea bream for any other fish. Leave them whole and adjust quantities according to your number of guests.

2/ Oven-baked tomatoes flavoured with basil infused olive oil

What you’ll need

Preparation time: 5 minutes
Cooking time: 10 minutes

– 2 red tomatoes
– 1 yellow tomato
– 1 Noire de Crimée tomato (or 4 large red tomatoes)
– 1 large yellow lemon
– Cherry tomatoes
– 1 large yellow onion
– Salt
– Pepper
– Fresh basil
– Basil infused olive oil
– Parchment paper

 

Directions

 

Preheat your oven to 200°C (rotating heat)
Cut the large tomatoes in 4 lengthwise. Quarter the lemon and onion and then cut each of those quarters into 2.
Place the tomato, onion and lemon on a baking dish alternating between colours
Salt and pepper to taste and add a drizzle of basil infused olive oil
– Bake for 12 minutes at 200 °C (rotating heat) then 3 minutes (grill)

Watch carefully after the first 12 minutes, the tomatoes should be lightly grilled and not burned !!!

 

Tips and twists

* should you have more guests, feel free to multiply the ingredients by 2, 3 or 4 and even add other vegetables such as sweet peppers or courgettes, or starchy ones such as sweet potato, cassava or Yam fries.
